Cucurbita pepo

This highly productive and versatile squash grows on long vines, and is well known to our South African farmers’ market customers, who have told me that it is often a baby’s first food in their country. It can be eaten at a very young stage skin and all, or if a bit more mature the shell can be used as a bowl to eat the flesh and seeds (making an excellent vehicle for butter and salt), or as it becomes more mature, the seeds are discarded and the flesh is eaten like a winter squash.
