Overwintering cauliflower is transplanted out in August for harvest the following spring. Since it develops in the cool weather of spring it tastes smooth, sweet, and nutty with superior flavour compared to the usual summer grown cauliflower. Plus it is nice to have a substantial vegetable so early in the spring.

We grow this seed as part of a local Saltspring project to save this variety of overwinter cauliflower from disappearing. This seed came from plants that made it through a rough PNW winter including snow, wind, rain, and a cold snap to -10C!
